The farm near the brewery is usually crowded with families and other visitors this time of year for strawberry picking. This year, however, due to the recent coronavirus, many of the delicious strawberries were looking for a place to go.
CoEd decided to brew a beer using the fresh strawberries. Among the many varieties of strawberries grown on the farm, we chose the "Yotsuboshi" variety.
The name "Yotsuboshi" comes from the fact that it has a combination of "sweetness," "acidity," and "flavor," making it a four-star class of tasty strawberry. They are characterized by their well-rounded shape and red cross section.
*Strawberries are prepared in a food processor before being put into the brewing kettle.
*The hops used are "Shinshu Early Season" and "Kaikogane" leaf hops. The hops are added by hand, breaking them up a little at a time.
The beer style is "Fruit Wheat Ale.
To match the simple base, strawberries were also narrowed down to only "Yotsuboshi".
The refreshing flavor of the sourness of the strawberries and wheat malt is simple and the bitterness of the hops is mild.
